I didn't see the bone. There should have been the Tibia and Fibula that that string ran into, and it would not have cut through the bone that easy. Even when doctors use a bone saw, it takes a minute to get through bone. It's just looks off to me. I am wondering if it was a fake but realistic foot used for training purposes.
